The word Tsolikouri may seem almost funny to you and it is quite normal not to hear it often. It is the most productive grape in Georgia, one of the oldest wine-producing countries in the world with a huge history in wine production and the use of very rare and special winemaking methods. Tsolikouri - Makaridze is one of those wines, that is hard to find, but once you try it you will understand why the marriage of ancient Georgian traditions with modern techniques has brought admirable results, placing the country back on the ramparts of the world wine scene.
 
Makaridze Winery is located in Imereti, Georgia, and now operates with the 5th generation at the helm. Gogita at the age of 23 decided to continue the family tradition and quit his basic job at the local town hall in the area, to plant his first vineyard and create a mashup of tradition, winemaking, and heritage, creating natural wines with traditional Georgian wines methods, which included it in the NWA (National Wine Association). The vines are located in Terjola, on the right bank of the Chkhara River, on slopes with clay and limestone soils and an altitude of 250-300 meters, giving the wines volume and aromatic richness. The grapes are placed in the traditional qvevri clay containers buried in the earth, so that the fermentation takes place at the natural temperature of the soil and gives a wine with non-existent barrel aromas, but intense citrus and a lot of nerve, which gives it freshness and purity.
 
Tsolikouri - Makaridze has a very special and distinctive style that cannot go unnoticed and you have to taste it now!

Tastes Like
In the glass, it is moderately lemony. Rich aromas of lemon, citrus, lime, ripe apricot, ripe pear, yellow apple and nectarine.
 
It has a medium body and crisp acidity that lends intense freshness. Lemon, citrus, grapefruit, nectarine, lemon blossoms, lovage, and lemongrass meet in a subtle and very elegant lemony aftertaste.

Enjoy it with varieties of yellow cheeses, pork with plums, and traditional Greek green beans with tomato and olive oil.

Pumpkin risotto with dry anthotyro cheese

  • 250 grams of Arborio rice
  • 500 ml of vegetable broth
  • 1 medium onion
  • 50 ml olive oil
  • 150 ml white wine
  • 300 gr pumpkin
  • 1 star anise
  • 100 gr butter
  • 50 ml of cream
  • 150 g dry anthotyro cheese
  • Salt
  • Pepper

Pare the pumpkin, chop half in dices and boil the rest in salted water with star anise. After it gets soft, remove the anise and transfer into a blender. Blanch the diced pumpkin in salted water. Chop the onion and sauté in olive oil, in a large saucepan until it is transparent, then add the rice by stirring with a wooden spoon. Pour in the wine and allow it to evaporate. Add some of the broth occasionally, by stirring continuously until the risotto is done. Remove from heat, add puree and diced pumkin, cream, butter, and cheese and mix all the ingredients well. Serve and if you like,  add a little more cheese and some of the pumpkin's dices.
